Chicken Bellagio is a classic chicken and pasta dish. It combines fried chicken with prosciutto, pesto, cream sauce, onions, garlic, spaghettini pasta, arugula, and parmesan cheese. The chicken is first breaded and fried and then drained and set aside.
Cook the pasta and drain. Make a pesto sauce using basil and oil. Combine the pasta and pesto sauce. Place the chicken on top of the pasta and Prosciutto on top of the chicken.
Pour cream sauce in a skillet and add garlic and parmesan to make a garlic parmesan cream sauce. Finish the dish with this sauce and finally the chopped arugula.
As you slice through the chicken and prosciutto, get a good helping of the pesto drenched pasta. Be sure to get some cream sauce and arugula on your fork. Each bite will delight your taste buds. While not particularly sophisticated, it’s a step up from steak and potatoes.
